Key responsibilities

Primary Purpose: Operates the spirajoule, soluble line, and chiller in a safe, efficient manner to produce liquid smoke to meet customer commitments, company objectives and quality standards.

Monitors and adjusts the temperatures and pressures to control the quality and quantity of liquid smoke output

Essential duties and responsibilities:

· Perform Brix tests on spirajoule, sawdust moisture, volatiles, and souuble line (as directed).

· Perform maintenance and problem solving skills for minor breakdowns as needed.

· Take temperature readings on spirajoule, soluble line, and boiler every hour.

· Rod-out (clean spirajoule) every two hours.

· Pump-out smoke to settling tank, as required by production volume from spirajoule.

· Recharge carbon filters and set-up lines to run soluble system.

· Pump smoke to feed tank on evaporator and to finish product tank once complete.

· Sanitation as required.

· Grease, oil, and lube equipment as required.

· Maintain neat, clean and organized production floor and control room by cleaning daily.

· Keep daily production logs.

· Keeps production area clean and safe.

· Complies with all corporate safety and environmental regulations and procedures.

· Complies with all HACCP Food Service procedures and guidelines.

· Performs other duties as assigned
